Grillsmith - Lakeland, FL

Grillsmith is a Florida chain. It was full this evening with a minimum 20 minute wait however I was given the option of immediate seating in front of the grill station.  It was an easy choice to make as I would be able watch the cooks, waitresses, and runners in operation.

Lemon Feta Chicken is one of their signature dishes which was a driving reason I ordered it plus I wanted to eat healthier. It consisted of a grilled chicken breast with feta cheese, artichoke hearts, sun-dried tomatoes and fresh basil with a lemon-butter white wine reduction. The chicken was a little overcooked and the flavor leaning on the tart side with the lemon the most prominent.  The beans were a underdone with a raw tinge.  The smashed cauliflower with a creamy texture was the most comforting and tasty of the three.  A simple dish like chicken breast is the test of culinary greatness. This was OK.

Creme Brulee.  The brulee had the desirable hard shell. The creme was acceptably chilled and smooth but could have been just a tad sweeter.  Decent but again lacking the wow factor.

Grillsmith is on the higher cost side for food that was lacking wow. Their concept is great but the execution could be better. Service was pleasant. Grillsmith wouldn't be a routine stop for me.
